Ground Turkey & Cauliflower Rice Stuffed Bell Peppers

A colorful, heart-healthy dish you’ll want to make again and again.

I tried something new recently, and I really liked it—so I had to share! This recipe is quick, easy, and makes for a beautiful presentation on your plate. Best of all, it’s low in fat and carbs, making it perfect for anyone following a Mediterranean-style diet or seeking a heart-healthy, diabetic-friendly meal full of vibrant veggies and lean protein.

These Ground Turkey & Cauliflower Rice Stuffed Bell Peppers are a fantastic go-to when bell peppers go on sale at the grocery store. Not only are they packed with flavor, but they’re also rich in nutrients—offering fiber, Vitamin C, and Vitamin A. Red bell peppers, in particular, are high in carotenoids, which may help protect against certain cancers.

Serving Tip: Pair this dish with a fresh garden salad topped with your favorite veggies and some juicy peach slices. The natural sweetness of the fruit balances beautifully with the savory peppers.


Ingredients:

  • 1 lb ground turkey
  • 12 oz bag frozen cauliflower rice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt (omit if following a DASH diet)
  • ¼ cup Hatch green chile or your favorite salsa
  • 4 bell peppers (any color)
  • Pepper Jack cheese (or cheese of your choice)


Instructions:

  1. Brown the turkey in a skillet over medium heat.
  2. Add cauliflower rice, garlic powder, onion powder, and salt to the pan. Sauté on low heat for 10 minutes.
  3. Stir in the Hatch green chile or salsa, then turn off the heat.
  4. Cut bell peppers in half lengthwise, removing the seeds and stems.
  5. Line a baking sheet with parchment paper.
  6. Stuff each pepper half with the turkey mixture, top with cheese.
  7. Bake at 350°F for 30–40 minutes, or until the peppers are tender and the cheese is golden.
